Ingredients

  • 2 cups Amazi (fermented milk / buttermilk)

  • 1 tbsp lemon juice

  • ½ tsp salt

Make it

  1. Pour the Amazi into a cheesecloth-lined strainer set over a bowl.
  2. Let it drain for 24hours in the fridge until thick and creamy – the longer it drains the firmer the cheese will be.
  3. Mix in lemon juice, any type of flavouring and salt to taste or roll it in a ball cover it with Glad Wrap and leave it in the fridge for another day.  When removed from the fridge you can rol your cheese ball or balls through crushed nuts or shredded herbs
  4. Spread onto crackers.
