creating grazing perfection
Prepare the Base: Preheat your oven to 180°C . Lightly spray a loaf tin with non-stick cooking spray or line it with baking paper. Choose a 23 x 13 cm (9 x 5 inches) tin for longer crackers or a 9 x 19 cm (7.5 x 3.5 inches) tin for squarer crackers.
Mix the Ingredients: In a large bowl, combine the flour, baking soda, brown sugar, salt, pepper, rosemary, cranberries, seeds, and nuts. Mix until well distributed. Add the buttermilk and honey (or maple syrup) and stir until the mixture forms a thick batter.
Bake the Loaf: Pour the batter into the prepared loaf tin. Bake for 30 minutes in a larger tin or 40 minutes in a smaller tin. To prevent over-browning, loosely cover with foil halfway through the baking time.
Cool and Freeze: Allow the baked loaf to cool in the tin for 15 minutes before transferring it to a wire rack to cool completely. Once cooled, wrap the loaf and freeze for 30–60 minutes to make slicing easier.
Slice and Bake the Crackers: Preheat the oven to 160°C . Line two baking trays with parchment paper or place a cooling rack inside a baking tray for better airflow. Slice the chilled loaf as thinly as possible and arrange the slices on the trays. Bake for 15 minutes, then flip each slice and bake for an additional 5–10 minutes until golden and crisp.
Cool and Store: Let the crackers cool on a wire rack. For fan ovens, turn off the heat, leave the door ajar with a cloth, and allow them to cool inside. Once fully cooled, store the crackers in an airtight container.
