Ingredients
-
3 red bell peppers, roasted and peeled (Add garlic cloves & red onions during the roasting process for extra flavour)
-
Olive oil (enough to cover the peppers)
-
1 tbsp red wine vinegar
-
Black peppercorns (about 1 tsp)
-
Fresh rosemary sprigs
Steps to Elevate your Graze
- Roast the bell peppers over an open flame or under a broiler until charred and blistered. Allow them to cool, then peel off the skins and remove seeds.
- Chop the roasted peppers finely or pulse them in a food processor for a smoother texture.
- In a saucepan, sauté minced garlic until fragrant. Add the roasted peppers, vinegar, sugar, smoked paprika, and salt.
- Simmer the mixture on low heat for about 25 minutes, stirring occasionally, until it thickens into a preserve-like consistency.
- Cool completely before serving.
